Ingredients
- 4 cups of fresh blueberries
- 1/4 cup of granulated sugar
- 1 tablespoon of lemon juice
- 1/2 cup of all-purpose flour
- 1/2 cup of old-fashioned rolled oats
- 1/2 cup of light brown sugar
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of salt
- 1/4 cup of unsalted butter, cold and cut into small pieces
- 1 pint of vanilla bean gelato
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine 4 cups of fresh blueberries, 1/4 cup of granulated sugar, and 1 tablespoon of lemon juice. Toss to coat the blueberries and set aside.
- In a separate bowl, mix 1/2 cup of all-purpose flour, 1/2 cup of old-fashioned rolled oats, 1/2 cup of light brown sugar, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of salt. Stir to combine.
- Add 1/4 cup of cold, unsalted butter pieces to the dry mixture. Use your fingers to work the butter into the dry ingredients until it resembles coarse crumbs.
- Transfer the coated blueberries to a greased 9x9 inch baking dish. Sprinkle the crumb mixture evenly over the top of the blueberries.
- Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the blueberry filling is bubbling around the edges.
- While the blueberry crisp is baking, allow the vanilla bean gelato to soften slightly at room temperature.
- Once the blueberry crisp is done, remove it from the oven and let it cool for 10 minutes before serving.
- Scoop the warm blueberry crisp into individual serving bowls and top each with a generous scoop of vanilla bean gelato.
- Serve immediately and enjoy the delicious combination of warm blueberry crisp and creamy vanilla bean gelato.
