Instructions

  • In a skillet, cook 8 slices of bacon until crispy. Remove from the skillet and drain on paper towels.
  • In a small bowl, mix 1/2 cup of mayonnaise, 2 tablespoons of minced chipotle peppers in adobo sauce, 1 teaspoon of lime juice, and salt and pepper to taste to make the spicy chipotle mayo.
  • Lay out 4 large flour tortillas and spread the chipotle mayo evenly over each tortilla.
  • Divide 2 cups of shredded lettuce evenly among the tortillas, spreading it over the mayo.
  • Place 2 slices of tomato on top of the lettuce on each tortilla.
  • Divide the cooked bacon evenly among the tortillas, placing it on top of the tomato slices.
  • Fold the sides of each tortilla in, then roll up tightly from the bottom to create a wrap.
  • If desired, heat a large skillet over medium heat and place the wraps seam-side down in the skillet. Cook for 2-3 minutes on each side until the tortilla is golden and crispy.
