Bison meatloaf has a rich history in North American cuisine, with roots in the Great Plains where bison roamed freely. Chefs like Sean Sherman, known for revitalizing indigenous cuisine, have popularized this dish, infusing it with traditional flavors and modern twists. Restaurants in the Midwest and Rocky Mountain regions, such as those in South Dakota and Montana, have perfected this hearty dish. The key to a delicious bison meatloaf lies in using high-quality, lean bison meat and incorporating flavorful ingredients like wild rice, juniper berries, and foraged herbs. For a unique twist, some chefs incorporate indigenous cooking methods, such as smoking the meatloaf over open flames.
