Bisco
Created by: Howcan Team
Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup cold water
- 1 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
- 2 tablespoons sesame seeds (optional)
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine 2 cups of all-purpose flour, 1/2 cup of granulated sugar, and 1/4 teaspoon of salt.
- Add the cold, cubed unsalted butter to the flour mixture. Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
- In a small bowl, mix together 1/4 cup of cold water and 1 teaspoon of vanilla extract. Gradually add the water mixture to the flour mixture, stirring with a fork until the dough comes together.
- Turn the dough out onto a lightly floured surface and knead gently until smooth. Roll out the dough to about 1/4 inch thickness.
- Using a cookie cutter, cut out the dough into desired shapes and place them on the prepared baking sheet. Brush the tops of the biscuits with beaten egg and sprinkle with sesame seeds if desired.
- Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown.
- Allow the bisco to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy with a cup of tea!
Bisco, a traditional Colombian dish, originated in the Andean region. This hearty meal features a corn-based dough filled with a savory mixture of meat, potatoes, and spices, then wrapped in a banana leaf and steamed to perfection. The dish is believed to have been influenced by indigenous and Spanish culinary traditions. Today, Bisco can be found in many Colombian restaurants, particularly in the cities of Bogotá and Medellín. The key to a delicious Bisco lies in the quality of the corn dough and the flavorful filling. Some chefs also add achiote to give the dish a vibrant color and earthy taste. For a twist, some variations use plantain leaves instead of banana leaves for wrapping. For an authentic taste of this beloved Colombian dish, seek out a restaurant with a skilled chef who can masterfully blend the flavors and textures of Bisco.
