Instructions

  • In a medium bowl, whisk together 2 cups heavy cream, 1 cup whole milk, 3/4 cup granulated sugar, and 1 teaspoon vanilla extract until the sugar is dissolved.
  • Cover and refrigerate for at least 2 hours, or overnight.
  • In a small bowl, mix 1/2 cup mini chocolate chips, 1/2 cup unsalted butter, softened, 3/4 cup light brown sugar, 1 teaspoon vanilla extract, 1 1/4 cups all-purpose flour, and 1/4 teaspoon salt until well combined.
  • Roll the dough into small, bite-sized pieces and place on a parchment-lined baking sheet.
  • Freeze the cookie dough pieces for at least 1 hour.
  • Once the ice cream base is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions.
  • During the last few minutes of churning, add the frozen cookie dough pieces and continue to churn until evenly distributed.
  • Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours before serving.
