Hearty Beef Stew

Ingredients
- 2 pounds of beef stew meat, cut into 1-inch cubes
- 1/4 cup of all-purpose flour
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 3 tablespoons of olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups of beef broth
- 1 cup of red wine
- 2 tablespoons of tomato paste
- 1 teaspoon of Worcestershire sauce
- 2 cups of carrots, sliced
- 2 cups of potatoes, diced
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- 1 cup of frozen peas
Instructions
- In a large bowl, combine 1/4 cup of flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Dredge the beef stew meat in the flour mixture until evenly coated.
- In a large pot or Dutch oven, heat 3 tablespoons of olive oil over medium-high heat.
- Add the coated beef stew meat to the pot and brown on all sides, about 5 minutes.
- Add the chopped onion and minced garlic to the pot and cook for an additional 2 minutes.
- Pour in 4 cups of beef broth and 1 cup of red wine, stirring to scrape up any browned bits from the bottom of the pot.
- Stir in 2 tablespoons of tomato paste and 1 teaspoon of Worcestershire sauce.
- Add the sliced carrots, diced potatoes, dried thyme, and dried rosemary to the pot.
- Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 1 1/2 to 2 hours, or until the meat is tender.
- Stir in 1 cup of frozen peas and cook for an additional 5 minutes until heated through.
- Season with additional salt and pepper to taste, if desired.
- Serve the hearty beef stew hot and enjoy!
