Instructions

  • Add the coated beef stew meat to the pot and brown on all sides, about 5 minutes.
  • Add the chopped onion and minced garlic to the pot and cook for an additional 2 minutes.
  • Pour in 4 cups of beef broth and 1 cup of red wine, stirring to scrape up any browned bits from the bottom of the pot.
  • Stir in 2 tablespoons of tomato paste and 1 teaspoon of Worcestershire sauce.
  • Add the sliced carrots, diced potatoes, dried thyme, and dried rosemary to the pot.
  • Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 1 1/2 to 2 hours, or until the meat is tender.
  • Stir in 1 cup of frozen peas and cook for an additional 5 minutes until heated through.
  • Season with additional salt and pepper to taste, if desired.
