Ingredients
- 1 (3-4 pound) beef arm roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup beef broth
- 1 onion, sliced
- 3 carrots, chopped
- 3 potatoes, chopped
Instructions
- Preheat the oven to 325 degrees F.
- In a small bowl, mix together 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried thyme, and 1 teaspoon dried rosemary.
- Rub the spice mixture all over the beef arm roast.
- In a large Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Sear the beef arm roast on all sides until browned, about 3-4 minutes per side.
- Add 1 cup of beef broth to the Dutch oven. Cover and place in the preheated oven.
- Cook for 2 hours, then add the sliced onion, chopped carrots, and chopped potatoes to the Dutch oven. Cover and continue cooking for an additional 1 hour, or until the beef is tender and the vegetables are cooked through.
- Remove the beef arm roast from the Dutch oven and let it rest for 10 minutes before slicing.
- Serve the sliced beef arm roast with the cooked vegetables and enjoy!
