Instructions

  • Preheat the oven to 325 degrees F.
  • In a small bowl, mix together 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried thyme, and 1 teaspoon dried rosemary.
  • Rub the spice mixture all over the beef arm roast.
  • In a large Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Sear the beef arm roast on all sides until browned, about 3-4 minutes per side.
  • Add 1 cup of beef broth to the Dutch oven. Cover and place in the preheated oven.
  • Cook for 2 hours, then add the sliced onion, chopped carrots, and chopped potatoes to the Dutch oven. Cover and continue cooking for an additional 1 hour, or until the beef is tender and the vegetables are cooked through.
