  • 1 cup cauliflower rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
  • In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the ground beef and cook until browned. Remove the beef from the skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil. Saute the onion, garlic, and red bell pepper until softened.
  • Add the broccoli florets and cauliflower rice to the skillet. Cook for 5 minutes, stirring occasionally.
  • Return the cooked ground beef to the skillet. Stir in the beef broth, paprika, thyme, salt, and pepper. Cook for an additional 5 minutes.
  • Transfer the beef and vegetable mixture to the prepared baking dish. Sprinkle the shredded cheddar cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Allow the casserole to cool for a few minutes before serving. Enjoy!
