Beef and Vegetable Cauliflower Rice Casserole

Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup broccoli florets
- 1 cup cauliflower rice
- 1 cup shredded cheddar cheese
- 1/2 cup beef broth
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
- In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the ground beef and cook until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add the remaining 1 tbsp of olive oil. Saute the onion, garlic, and red bell pepper until softened.
- Add the broccoli florets and cauliflower rice to the skillet. Cook for 5 minutes, stirring occasionally.
- Return the cooked ground beef to the skillet. Stir in the beef broth, paprika, thyme, salt, and pepper. Cook for an additional 5 minutes.
- Transfer the beef and vegetable mixture to the prepared baking dish. Sprinkle the shredded cheddar cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Allow the casserole to cool for a few minutes before serving. Enjoy!
