Beef and Vegetable Casserole

Ingredients
- 1.5 lbs beef stew meat, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 bell pepper, chopped
- 1 cup frozen peas
- 1 cup beef broth
- 1 can (14 oz) diced tomatoes
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp all-purpose flour
Instructions
- Preheat the oven to 350 degrees F.
- In a large oven-safe pot or Dutch oven, heat 1 tbsp of olive oil over medium-high heat.
- Add the beef stew meat and cook until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.
- Add the remaining 1 tbsp of olive oil to the pot. Add the onion, garlic, carrots, celery, and bell pepper. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften.
- Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
- Pour in the beef broth, diced tomatoes, tomato paste, thyme, rosemary, salt, and black pepper. Stir to combine.
- Return the browned beef to the pot and bring the mixture to a simmer. Cover the pot and transfer it to the preheated oven.
- Bake for 45 minutes, or until the beef is tender.
- Remove the pot from the oven and stir in the frozen peas. Let the casserole sit for 5 minutes to allow the peas to heat through.
- Serve the beef and vegetable casserole hot, and enjoy!
