  • 1 tsp dried rosemary
  • 1/2 tsp salt

Instructions

  • Preheat the oven to 350 degrees F.
  • In a large oven-safe pot or Dutch oven, heat 1 tbsp of olive oil over medium-high heat.
  • Add the beef stew meat and cook until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.
  • Add the remaining 1 tbsp of olive oil to the pot. Add the onion, garlic, carrots, celery, and bell pepper. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften.
  • Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
  • Pour in the beef broth, diced tomatoes, tomato paste, thyme, rosemary, salt, and black pepper. Stir to combine.
  • Return the browned beef to the pot and bring the mixture to a simmer. Cover the pot and transfer it to the preheated oven.
  • Bake for 45 minutes, or until the beef is tender.
  • Remove the pot from the oven and stir in the frozen peas. Let the casserole sit for 5 minutes to allow the peas to heat through.
  • Serve the beef and vegetable casserole hot, and enjoy!
