Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the sliced smoked sausage and cook until browned, about 5 minutes.
  • Add the chopped onion and minced garlic, and cook until the onion is soft, about 3 minutes.
  • Stir in the drained and rinsed mixed beans, chicken broth, diced tomatoes, dried thyme, and paprika.
  • Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.
  • Taste and adjust seasoning if needed.
