Ingredients
- 1 lb of smoked sausage, sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 3 cans of mixed beans, drained and rinsed
- 4 cups of chicken broth
- 1 can of diced tomatoes
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the sliced smoked sausage and cook until browned, about 5 minutes.
- Add the chopped onion and minced garlic, and cook until the onion is soft, about 3 minutes.
- Stir in the drained and rinsed mixed beans, chicken broth, diced tomatoes, dried thyme, and paprika.
- Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.
- Taste and adjust seasoning if needed.
- Serve hot and enjoy!
