  • Spread 1/4 cup of softened butter on one side of each slice of bread.
  • Place a slice of cheddar cheese on the unbuttered side of 4 bread slices.
  • Divide the BBQ pulled chicken evenly on top of the cheese slices.
  • Top with another slice of cheddar cheese and the remaining 4 bread slices, buttered side out.
  • Heat a non-stick skillet over medium heat.
  • Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until golden brown and the cheese is melted.
