Ingredients
- 1.5 lbs of boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup of BBQ sauce
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 8 wooden skewers, soaked in water for 30 minutes
Instructions
- In a large bowl, combine 1/2 cup of BBQ sauce, 1 tablespoon of olive oil, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1/2 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Add the chicken cubes to the bowl and toss to coat evenly. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken cubes, red bell pepper, green bell pepper, and red onion onto the soaked wooden skewers, alternating the ingredients.
- Place the skewers on the preheated grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred.
- Brush the skewers with additional BBQ sauce during the last few minutes of grilling, if desired.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
