Created by: Howcan Team
Ingredients
- 12 oz elbow macaroni
- 2 cups shredded cooked chicken
- 1 cup BBQ sauce
- 4 slices of bacon, chopped
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup breadcrumbs
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
- Cook the macaroni according to package instructions. Drain and set aside.
- In a small bowl, toss the shredded chicken with BBQ sauce until well coated. Set aside.
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess grease. Set aside.
- In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
- Gradually whisk in the milk and cook, stirring constantly, until the mixture thickens and begins to bubble.
- Reduce the heat to low and stir in the shredded cheddar and mozzarella cheese until melted and smooth. Season with salt and pepper to taste.
- Add the cooked macaroni and BBQ chicken to the cheese sauce, stirring until well combined. Transfer the mixture to the prepared baking dish.
- In a small bowl, combine the breadcrumbs with the crispy bacon. Sprinkle the breadcrumb and bacon mixture evenly over the top of the mac and cheese.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden and the cheese is bubbly.
- Allow to cool for a few minutes before serving. Enjoy!
