Barley Bowl

Ingredients
- 1 cup barley
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese (optional)
Instructions
- In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add 1 cup of barley, reduce heat to low, cover, and simmer for 25-30 minutes or until barley is tender and liquid is absorbed.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 diced onion and 2 minced garlic cloves, and sauté for 2-3 minutes until fragrant.
- Add 1 diced red bell pepper and 1 diced zucchini to the skillet, and cook for 5-7 minutes until vegetables are tender but still crisp.
- Stir in the cooked barley, 1 cup of halved cherry tomatoes, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for an additional 2-3 minutes to heat through.
- Remove from heat and stir in 1/4 cup of chopped fresh parsley.
- Divide the barley mixture into 4 bowls, and top with crumbled feta cheese if desired.
- Serve hot and enjoy!
