Instructions

  • In a small bowl, whisk the 2 large egg yolks. Gradually whisk in 1/2 cup of the hot milk mixture to temper the eggs. Then, pour the egg mixture back into the saucepan with the remaining milk mixture. Cook for an additional 2 minutes, stirring constantly.
  • Remove the saucepan from the heat and stir in 1 tablespoon of unsalted butter and 1 teaspoon of vanilla extract. Let the pudding cool for 5 minutes.
  • In 6 serving cups, layer the sliced bananas, crushed vanilla wafers, and the pudding mixture. Repeat the layers, ending with the pudding on top.
  • Cover the cups with plastic wrap and refrigerate for at least 2 hours to set.
