Ingredients
- 2 cups of whole milk
- 1/2 cup of granulated sugar
- 1/4 cup of cornstarch
- 1/4 teaspoon of salt
- 2 large egg yolks
- 1 tablespoon of unsalted butter
- 1 teaspoon of vanilla extract
- 3 ripe bananas, sliced
- 1 cup of vanilla wafers, crushed
- 1 cup of whipped cream
Instructions
- In a medium saucepan, combine 2 cups of whole milk, 1/2 cup of granulated sugar, 1/4 cup of cornstarch, and 1/4 teaspoon of salt. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
- In a small bowl, whisk the 2 large egg yolks. Gradually whisk in 1/2 cup of the hot milk mixture to temper the eggs. Then, pour the egg mixture back into the saucepan with the remaining milk mixture. Cook for an additional 2 minutes, stirring constantly.
- Remove the saucepan from the heat and stir in 1 tablespoon of unsalted butter and 1 teaspoon of vanilla extract. Let the pudding cool for 5 minutes.
- In 6 serving cups, layer the sliced bananas, crushed vanilla wafers, and the pudding mixture. Repeat the layers, ending with the pudding on top.
- Cover the cups with plastic wrap and refrigerate for at least 2 hours to set.
- Before serving, top each cup with a dollop of whipped cream and a sprinkle of crushed vanilla wafers. Enjoy!
