Ingredients
- 1 block of firm tofu, pressed and cubed
- 1/4 cup balsamic vinegar
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- Cooked rice or noodles for serving
Instructions
- In a small bowl, whisk together 1/4 cup balsamic vinegar, 2 tablespoons soy sauce, 1 tablespoon honey, and 1 tablespoon cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the bell pepper, broccoli, and carrot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add the green onions, garlic, and ginger to the skillet. Cook for an additional 1-2 minutes.
- Return the tofu to the skillet and pour the balsamic glaze over the tofu and vegetables. Stir to coat everything evenly and cook for 1-2 minutes until the sauce thickens and coats the tofu and vegetables.
