  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno pepper, seeded and minced

Instructions

  • In a small bowl, whisk together 1/4 cup of balsamic vinegar, 2 tablespoons of honey, 1 tablespoon of olive oil, and 1 teaspoon of minced garlic. Season with salt and pepper to taste.
  • Place the salmon fillets in a shallow dish and pour the balsamic glaze over them. Allow the salmon to marinate for 10 minutes.
  • While the salmon is marinating, prepare the mango salsa. In a medium bowl, combine 2 diced ripe mangoes, 1/2 finely chopped red onion, 1 diced red bell pepper, 1/4 cup of chopped fresh cilantro, 1 minced jalapeno pepper, and the juice of 1 lime. Mix well and season with salt to taste.
  • Heat a grill or grill pan over medium-high heat. Place the marinated salmon fillets on the grill and cook for 4-5 minutes on each side, or until the salmon is cooked through and has grill marks.
  • Remove the salmon from the grill and transfer to a serving platter. Spoon the mango salsa over the top of the salmon fillets.
  • Serve the balsamic glazed salmon with mango salsa immediately, and enjoy!
