Balsamic Glazed Salmon with Mango Salsa

Ingredients
- 4 salmon fillets
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- Salt and pepper to taste
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno pepper, seeded and minced
- Juice of 1 lime
Instructions
- In a small bowl, whisk together 1/4 cup of balsamic vinegar, 2 tablespoons of honey, 1 tablespoon of olive oil, and 1 teaspoon of minced garlic. Season with salt and pepper to taste.
- Place the salmon fillets in a shallow dish and pour the balsamic glaze over them. Allow the salmon to marinate for 10 minutes.
- While the salmon is marinating, prepare the mango salsa. In a medium bowl, combine 2 diced ripe mangoes, 1/2 finely chopped red onion, 1 diced red bell pepper, 1/4 cup of chopped fresh cilantro, 1 minced jalapeno pepper, and the juice of 1 lime. Mix well and season with salt to taste.
- Heat a grill or grill pan over medium-high heat. Place the marinated salmon fillets on the grill and cook for 4-5 minutes on each side, or until the salmon is cooked through and has grill marks.
- Remove the salmon from the grill and transfer to a serving platter. Spoon the mango salsa over the top of the salmon fillets.
- Serve the balsamic glazed salmon with mango salsa immediately, and enjoy!
