Baked Salmon with Brown Rice and Steamed Broccoli

Ingredients
- 4 salmon fillets (6 oz each)
- 1 cup brown rice
- 2 cups water
- 1 head of broccoli, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the brown rice under cold water and drain. In a medium saucepan, bring 2 cups of water to a boil. Add the brown rice, reduce heat to low, cover, and simmer for 30-40 minutes, or until the rice is tender and the water is absorbed.
- While the rice is cooking, prepare the salmon. Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with garlic powder, paprika, salt, and pepper. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- In a separate pot, bring water to a boil and place a steamer basket over the pot. Add the broccoli florets to the steamer basket, cover, and steam for 5-7 minutes, or until the broccoli is tender but still crisp.
- Divide the cooked brown rice, baked salmon, and steamed broccoli among 4 plates. Drizzle with the remaining olive oil and serve with lemon wedges.
