Ingredients
- 4 cod fillets (6 oz each)
- 1 cup quinoa
- 2 cups vegetable broth
- 1 lemon, juiced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the quinoa under cold water and drain well.
- In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
- While the quinoa is cooking, prepare the cod. Place the cod fillets in a baking dish and drizzle with the lemon juice and 1 tablespoon of olive oil. Season with salt, pepper, and dried oregano.
- Bake the cod in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- In a small skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Serve the baked cod over a bed of quinoa, drizzle with the garlic-infused olive oil, and garnish with fresh parsley. Enjoy!
