Instructions

  • Preheat the oven to 400°F (200°C).
  • In a shallow dish, combine 1/2 cup panko breadcrumbs, 1/4 cup grated Parmesan cheese, 2 tablespoons chopped fresh parsley, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
  • Brush both sides of the cod fillets with 1/4 cup melted butter, then coat them with the breadcrumb mixture, pressing gently to adhere.
  • Place the coated cod fillets on a greased baking sheet and drizzle with 2 tablespoons of olive oil.
