Created by: Howcan Team
Ingredients
- 4 cod fillets (6 oz each)
- 1/4 cup unsalted butter, melted
- 4 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together 1/4 cup of melted butter, 4 cloves of minced garlic, 1 tablespoon of fresh lemon juice, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Place the cod fillets in a baking dish and brush the garlic butter mixture over the fillets, ensuring they are evenly coated.
- Bake the cod in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
- While the cod is baking, prepare the roasted vegetables. Cut the mixed vegetables into bite-sized pieces and place them on a baking sheet. Drizzle with 2 tablespoons of olive oil, sprinkle with 1 teaspoon of dried thyme, 1/2 teaspoon of paprika, and season with salt and pepper to taste. Toss to coat the vegetables evenly.
- Place the baking sheet of vegetables in the oven with the cod during the last 10-15 minutes of cooking time, or until the vegetables are tender and slightly caramelized.
- Once the cod and vegetables are done, remove them from the oven. Serve the baked cod with the roasted vegetables alongside. Enjoy!
Baked Cod with Garlic Butter is a classic dish that has been enjoyed for generations. The dish originated in coastal regions where fresh cod is abundant, such as in Portugal and Spain. The cod is marinated in a flavorful mixture of garlic, butter, and herbs, then baked to perfection. The result is a tender and flaky fish with a rich and savory flavor. In recent years, the dish has been paired with roasted vegetables to add a healthy and colorful twist. The vegetables are seasoned with olive oil, salt, and pepper, then roasted until they are caramelized and tender. This addition provides a delightful contrast to the buttery cod and adds a pop of color to the plate. Many renowned chefs and restaurants have put their own spin on this classic dish, incorporating local and seasonal ingredients to create unique flavor profiles. The best version of this dish can often be found in coastal regions where fresh cod and a variety of vegetables are readily available. When preparing this dish, it's important to use the freshest ingredients possible. The quality of the cod and the flavor of the garlic butter are crucial to achieving the perfect balance of flavors. Additionally, the roasting of the vegetables should be carefully monitored to ensure they are cooked to perfection. For a delicious alternative, some chefs also recommend grilling the cod instead of baking it. This method imparts a smoky flavor to the fish and adds an extra layer of complexity to the dish. Whether baked or grilled, served with roasted vegetables, this dish is a delightful and satisfying meal that is sure to please any seafood lover.
