Ingredients
- 4 cod fillets (6 ounces each)
- 1/2 cup breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Zest of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together 1/2 cup breadcrumbs, 2 tablespoons chopped parsley, 1 tablespoon chopped thyme, 1 tablespoon chopped rosemary, and the zest of 1 lemon.
- Season the cod fillets with salt and pepper, then brush each fillet with 1/2 tablespoon of olive oil.
- Press the breadcrumb mixture onto the top of each cod fillet to form a crust.
- Place the cod fillets on a baking sheet lined with parchment paper.
