Instructions

  • Preheat the oven to 400°F (200°C).
  • In a food processor, pulse the almonds, parsley, dill, and Parmesan cheese until finely chopped. Transfer the mixture to a shallow dish.
  • Season the cod fillets with salt and pepper. Dredge each fillet in flour, then dip into the beaten eggs, and finally coat with the herb and almond mixture, pressing gently to adhere.
  • Place the coated cod fillets on a greased baking sheet and bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
