Instructions

  • Preheat the oven to 375 degrees F. Line a baking sheet with aluminum foil and place a wire rack on top.
  • In a large bowl, combine 2 pounds of ground beef, 1 cup breadcrumbs, 1/2 cup diced onion, 2 cloves minced garlic, 2 diced jalapeno peppers, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon cayenne pepper. Mix until well combined.
  • Add 1 cup of shredded cheddar cheese to the meat mixture and mix until evenly distributed.
  • Form the meat mixture into a loaf shape and place it on the wire rack. Wrap 8 slices of bacon around the meatloaf, tucking the ends underneath.
