Spicy Bacon and Cheddar Stuffed Mushrooms

Ingredients
- 12 large mushrooms, stems removed and reserved
- 6 slices of bacon, cooked and crumbled
- 1/2 cup of shredded cheddar cheese
- 1 jalapeno, seeded and finely chopped
- 2 cloves of garlic, minced
- 1/4 cup of breadcrumbs
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375 degrees F.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushroom stems, jalapeno, and garlic. Cook for 5 minutes, or until the mushrooms are tender. Remove from heat and let cool.
- In a bowl, combine the cooked bacon, cheddar cheese, breadcrumbs, and the cooked mushroom stem mixture. Season with salt and pepper.
- Stuff each mushroom cap with the bacon and cheddar mixture and place on a baking sheet. Drizzle with the remaining olive oil.
- Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
- Allow to cool for a few minutes before serving. Enjoy!
