  • 2 tablespoons of olive oil

  • Preheat the oven to 375 degrees F.
  • In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushroom stems, jalapeno, and garlic. Cook for 5 minutes, or until the mushrooms are tender. Remove from heat and let cool.
  • In a bowl, combine the cooked bacon, cheddar cheese, breadcrumbs, and the cooked mushroom stem mixture. Season with salt and pepper.
  • Stuff each mushroom cap with the bacon and cheddar mixture and place on a baking sheet. Drizzle with the remaining olive oil.
  • Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  • Allow to cool for a few minutes before serving. Enjoy!
