  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1/4 cup Greek yogurt
  • 1/4 cup salsa

  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1/4 cup Greek yogurt
  • 1/4 cup salsa

Instructions

  • Rinse the quinoa under cold water and drain well.
  • In a medium saucepan, bring the chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed. Fluff with a fork and set aside.
  • In a small bowl, mix the cumin, paprika, garlic powder, salt, and pepper. Season the diced chicken with the spice mixture.
  • In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes or until cooked through and golden brown. Set aside.
  • In a small bowl, combine the Greek yogurt and salsa to make the dressing.
  • To assemble the bowls, divide the cooked quinoa among 4 serving bowls. Top with the cooked chicken, sliced avocado, cherry tomatoes, red onion, and cilantro. Drizzle with the lime juice and the Greek yogurt salsa dressing.
