Instructions

  • In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice and cook for 10 minutes, then drain and set aside.
  • In the same saucepan, combine the cooked rice, 4 cups of whole milk, 1/2 cup of white sugar, 1/2 teaspoon of ground cinnamon, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of salt.
  • Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 30 minutes, stirring occasionally to prevent sticking.
  • If using, stir in 1/2 cup of raisins during the last 10 minutes of cooking.
  • Remove from heat and let the arroz con leche cool for 10 minutes before serving.
  • Sprinkle with additional ground cinnamon if desired, and enjoy warm or chilled.
