  • 3/4 cup of granulated sugar
  • 1/4 cup of brown sugar
  • 1 tablespoon of lemon juice
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground allspice
  • 2 tablespoons of cornstarch
  • 1 egg, beaten (for egg wash)

Instructions

  • In a large bowl, combine 2 1/2 cups of flour, 1 teaspoon of salt, and 1 teaspoon of sugar. Add the cold cubed butter and use a pastry cutter or fork to mix until the mixture resembles coarse crumbs.
  • Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Divide the dough in half, shape into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
  • Preheat the oven to 425°F (220°C).
  • In a large bowl, toss the sliced apples with 3/4 cup of granulated sugar, 1/4 cup of brown sugar, lemon juice, cinnamon, nutmeg, allspice, and cornstarch until the apples are evenly coated.
  • Roll out one disc of the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Place the rolled dough into the pie dish and trim any excess overhang.
  • Pour the apple filling into the pie crust, mounding it slightly in the center.
  • Roll out the second disc of chilled dough and place it over the filling. Trim any excess overhang and crimp the edges to seal. Cut slits in the top crust to allow steam to escape.
  • Brush the top crust with the beaten egg wash.
  • Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  • Allow the pie to cool for at least 1 hour before serving. Enjoy!
