Ingredients
- 8 oz Acini di Pepe pasta
- 6 oz pancetta, diced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- In a large pot, bring salted water to a boil. Add the Acini di Pepe pasta and cook according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
- Add the cooked Acini di Pepe pasta to the skillet with the crispy pancetta and garlic. Toss to combine and heat through for 2-3 minutes.
- Remove the skillet from the heat and stir in the grated Parmesan cheese and chopped parsley. Season with salt and pepper to taste.
- Serve the Crispy Pancetta and Parmesan Acini di Pepe in individual bowls, garnished with additional Parmesan cheese and parsley if desired. Enjoy!
