- 1 small pumpkin, peeled and diced (about 4 cups)

- 4 cups of vegetable broth
- 1 cup of coconut milk
- 1 tablespoon of olive oil
- 1 teaspoon of ground cumin
- 1/2 teaspoon of ground cinnamon
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.

- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return to the pot.
- Stir in the coconut milk and season with salt and pepper to taste. Let the soup simmer for an additional 5 minutes.
- Ladle the soup into bowls and garnish with fresh cilantro before serving.
