Ingredients
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced red onion
- 1/2 cup canned black beans, drained and rinsed
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a large bowl, mix together the diced bell peppers, diced red onion, black beans, ground cumin, chili powder, salt, and black pepper.
- Lay out 2 flour tortillas and sprinkle half of the shredded cheddar cheese evenly over each tortilla.
- Divide the vegetable and bean mixture evenly between the two tortillas, spreading it over the cheese.
- Sprinkle the remaining cheese over the vegetable mixture on each tortilla.
- Top each quesadilla with another flour tortilla to form a sandwich.
- In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
- Carefully transfer one quesadilla to the skillet and cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat with the remaining quesadilla, adding another tablespoon of olive oil to the skillet before cooking.
- Once both quesadillas are cooked, remove them from the skillet and let them cool for a minute before slicing each into 4 wedges.
- Serve hot with your favorite salsa, guacamole, or sour cream.
