Instructions

  • In a large bowl, mix together the diced bell peppers, diced red onion, black beans, ground cumin, chili powder, salt, and black pepper.
  • Lay out 2 flour tortillas and sprinkle half of the shredded cheddar cheese evenly over each tortilla.
  • Divide the vegetable and bean mixture evenly between the two tortillas, spreading it over the cheese.
  • Sprinkle the remaining cheese over the vegetable mixture on each tortilla.
  • Top each quesadilla with another flour tortilla to form a sandwich.
  • In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
  • Carefully transfer one quesadilla to the skillet and cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  • Repeat with the remaining quesadilla, adding another tablespoon of olive oil to the skillet before cooking.
  • Once both quesadillas are cooked, remove them from the skillet and let them cool for a minute before slicing each into 4 wedges.
  • Serve hot with your favorite salsa, guacamole, or sour cream.
