Ingredients
- 1 block (14 oz) of firm tofu, drained and cubed
- 1 cup of broccoli florets
- 1 cup of sliced bell peppers
- 1 cup of sliced carrots
- 1 cup of pineapple chunks
- 1/4 cup of teriyaki sauce
- 2 tablespoons of vegetable oil
- 1 tablespoon of cornstarch
- 1/4 cup of water
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a small bowl, mix 1/4 cup of teriyaki sauce with 1 tablespoon of cornstarch and 1/4 cup of water. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the cubed tofu to the skillet and cook for 5-7 minutes, or until golden brown on all sides. Remove the tofu from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil and stir-fry the broccoli, bell peppers, and carrots for 3-4 minutes, or until slightly tender.
- Add the pineapple chunks to the skillet and cook for an additional 2 minutes.
- Return the cooked tofu to the skillet and pour the teriyaki sauce mixture over the tofu and vegetables. Stir well to coat everything in the sauce.
- Cook for 2-3 minutes, or until the sauce thickens and everything is heated through.
- Season with salt and pepper to taste.
- Serve the vegetable teriyaki tofu with pineapple chunks over cooked rice and enjoy!
