  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 eggs
  • Vegetable oil for frying
  • 2 cups sugar
  • 1 cup water
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract

Instructions

  • In a saucepan, bring 1 cup of water and 1/2 cup of unsalted butter to a boil.
  • Reduce the heat to low and add 1 cup of all-purpose flour. Stir constantly until the mixture forms a ball of dough and pulls away from the sides of the pan.
  • Remove the dough from the heat and let it cool for 5 minutes.
  • Add 4 eggs, one at a time, mixing well after each addition until the dough is smooth and glossy.
  • Transfer the dough to a piping bag fitted with a star tip.
  • Heat vegetable oil in a deep pot to 375°F (190°C).
  • Pipe the dough into the hot oil, using a pair of scissors to cut the dough into 3-inch strips. Fry until golden brown, then transfer to a paper towel-lined plate to drain excess oil.
  • In a separate saucepan, combine 2 cups of sugar and 1 cup of water. Bring to a boil, then reduce the heat and simmer for 10 minutes to make a simple syrup.
  • Remove the syrup from the heat and stir in 1/2 cup of cocoa powder and 1 teaspoon of vanilla extract until smooth.
  • Dip each fried Tulumba into the chocolate sauce, coating it evenly, then place on a wire rack to set.
  • Serve the chocolate dipped Tulumba at room temperature and enjoy!
