Ingredients
- 1 block of firm tofu, pressed and cut into cubes
- 1/4 cup of soy sauce
- 2 tablespoons of brown sugar
- 2 tablespoons of lime juice
- 2 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1/2 teaspoon of turmeric
- 1/4 teaspoon of cayenne pepper
- 1 cup of jasmine rice
- 2 cups of water
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
- Skewers, soaked in water
Instructions
- In a bowl, mix together 1/4 cup of soy sauce, 2 tablespoons of brown sugar, 2 tablespoons of lime juice, 2 cloves of minced garlic, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of turmeric, and 1/4 teaspoon of cayenne pepper to make the marinade.
- Add the tofu cubes to the marinade and let it sit for at least 20 minutes.
- While the tofu is marinating, rinse 1 cup of jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed.
- Thread the marinated tofu cubes onto the soaked skewers.
- Heat 1 tablespoon of vegetable oil in a grill pan or skillet over medium-high heat. Cook the tofu skewers for 2-3 minutes on each side, or until they are golden brown and slightly charred.
- Serve the tofu satay with the jasmine rice and enjoy!
