Tofu Banh Mi Sandwich

Ingredients
- 1 block of firm tofu, sliced into 1/2 inch thick pieces
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1/2 cup mayonnaise
- 1 tablespoon Sriracha sauce
- 4 small baguettes or 1 large baguette, cut into 4 equal pieces and split lengthwise
- 1 cup pickled vegetables (carrots, daikon radish, and cucumber)
- 1/2 cup fresh cilantro leaves
- 1 jalapeno, thinly sliced
- Salt and pepper to taste
Instructions
- In a shallow dish, whisk together 1/4 cup soy sauce, 2 tablespoons rice vinegar, 2 tablespoons honey, 1 tablespoon sesame oil, grated ginger, and minced garlic.
- Add the tofu slices to the marinade, turning to coat. Let marinate for at least 15 minutes.
- In a small bowl, mix together the mayonnaise and Sriracha sauce. Set aside.
- Heat a grill pan or skillet over medium-high heat. Remove the tofu from the marinade and season with salt and pepper. Grill the tofu for 3-4 minutes on each side, or until golden brown and slightly crispy.
- Spread the Sriracha mayonnaise on the cut sides of the baguettes. Place the grilled tofu on the bottom half of each baguette.
- Top the tofu with pickled vegetables, fresh cilantro leaves, and sliced jalapeno. Close the sandwiches with the top half of the baguettes.
- Serve the Tofu Banh Mi Sandwiches immediately and enjoy!
