  • 1 block of firm tofu, sliced into 1/2 inch thick pieces
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 cup mayonnaise
  • 1 tablespoon Sriracha sauce
  • 4 small baguettes or 1 large baguette, cut into 4 equal pieces and split lengthwise
  • 1 cup pickled vegetables (carrots, daikon radish, and cucumber)
  • 1/2 cup fresh cilantro leaves
  • 1 jalapeno, thinly sliced
  • Salt and pepper to taste

Instructions

  • In a shallow dish, whisk together 1/4 cup soy sauce, 2 tablespoons rice vinegar, 2 tablespoons honey, 1 tablespoon sesame oil, grated ginger, and minced garlic.
  • Add the tofu slices to the marinade, turning to coat. Let marinate for at least 15 minutes.
  • In a small bowl, mix together the mayonnaise and Sriracha sauce. Set aside.
  • Heat a grill pan or skillet over medium-high heat. Remove the tofu from the marinade and season with salt and pepper. Grill the tofu for 3-4 minutes on each side, or until golden brown and slightly crispy.
  • Spread the Sriracha mayonnaise on the cut sides of the baguettes. Place the grilled tofu on the bottom half of each baguette.
  • Top the tofu with pickled vegetables, fresh cilantro leaves, and sliced jalapeno. Close the sandwiches with the top half of the baguettes.
  • Serve the Tofu Banh Mi Sandwiches immediately and enjoy!
