Ingredients
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup whole milk
- 1/4 cup unsweetened cocoa powder
- 1/4 cup hot water
- 1/2 teaspoon instant espresso powder
Instructions
- Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together 2 1/2 cups of flour, 2 1/2 teaspoons of baking powder, and 1/2 teaspoon of salt. Set aside.
- In a large bowl, cream 1 cup of softened butter and 1 3/4 cups of granulated sugar until light and fluffy.
- Add 4 eggs, one at a time, beating well after each addition. Stir in 1 tablespoon of vanilla extract.
- Gradually add the flour mixture to the creamed mixture, alternating with 1 cup of whole milk. Mix well after each addition until the batter is smooth.
- In a small bowl, mix 1/4 cup of unsweetened cocoa powder, 1/4 cup of hot water, and 1/2 teaspoon of instant espresso powder until smooth.
- Take 1 1/2 cups of the cake batter and mix it with the cocoa mixture to create the chocolate batter.
- To create the tiger stripe pattern, spoon 1/4 cup of the plain batter into the center of each prepared cake pan. Then, spoon 1/4 cup of the chocolate batter directly into the center of the plain batter. Continue alternating the batters, always spooning the new batter directly into the center of the previous one. This will create concentric circles of batter, resembling a tiger stripe pattern.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
