Instructions

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, mix together 1 1/2 cups of chocolate cookie crumbs, 1/4 cup of granulated sugar, and 1/3 cup of melted unsalted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.
  • In a large bowl, beat 4 packages of softened cream cheese and 1 cup of granulated sugar until smooth. Add 4 large eggs, one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract and 1/4 cup of all-purpose flour. Finally, fold in 1 cup of sour cream. Pour the mixture over the cooled chocolate crust.
  • Bake in the preheated oven for 55-60 minutes, or until the center is set. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  • Refrigerate the cheesecake for at least 4 hours, or overnight.
  • In a small saucepan, heat 1 1/2 cups of fresh strawberries and 1/4 cup of strawberry jam over medium heat, stirring constantly until the jam is melted and the strawberries are soft. Let the strawberry topping cool, then spread it over the chilled cheesecake before serving.
