Strawberry Cheesecake with Fresh Strawberry Topping

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup white sugar
  • 1/2 cup butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 1/4 cups white sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup white sugar
  • 1/2 cup water
  • 1 tablespoon cornstarch

Instructions

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a medium bowl, mix together 1 1/2 cups graham cracker crumbs, 1/4 cup sugar, and melted butter. Press onto the bottom of a 9-inch springform pan.
  • In a large bowl, mix 4 packages of softened cream cheese, 1 1/4 cups sugar, and vanilla extract until smooth. Beat in eggs one at a time. Pour filling over the crust.
  • Bake in the preheated oven for 55 to 60 minutes, or until the center is almost set. Allow to cool, then refrigerate for at least 4 hours or overnight.
  • In a saucepan, combine sliced strawberries, 1/2 cup sugar, water, and cornstarch. Cook over medium heat, stirring constantly, until thickened. Remove from heat and allow to cool.
  • Once the cheesecake has chilled, pour the strawberry topping over the cheesecake. Arrange additional fresh strawberry slices on top for garnish.
  • Slice and serve the strawberry cheesecake with fresh strawberry topping. Enjoy!
