Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- Zest of 2 lemons
- 2 tablespoons fresh lemon juice
- 1/2 cup granulated sugar for rolling
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Line cookie sheets with parchment paper.
- In a small bowl, stir together 2 3/4 cups of flour, 1 teaspoon of baking soda, and 1/2 teaspoon of baking powder. Set aside.
- In a large bowl, cream together 1 cup of softened butter and 1 1/2 cups of white sugar until smooth. Beat in 1 egg, then stir in 1/2 teaspoon of vanilla extract, the zest of 2 lemons, and 2 tablespoons of fresh lemon juice. Gradually blend in the dry ingredients.
- Roll rounded teaspoonfuls of dough into balls, and roll in 1/2 cup of granulated sugar. Place on prepared cookie sheets about 1.5 inches apart.
- Bake for 8 to 10 minutes in the preheated oven, or until lightly golden. Let cool on wire racks.
