Ingredients
- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/4 cup assorted colorful sprinkles
- 12 small chocolate candies (for filling)
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract
- Edible silver star sprinkles (for decoration)
Instructions
- Preheat the oven to 350°F and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together 1 3/4 cups of flour, 1 1/2 teaspoons baking powder, and 1/2 teaspoon salt.
- In a separate large bowl, cream 1/2 cup of softened butter and 1 cup of granulated sugar until light and fluffy.
- Add 2 eggs, one at a time, beating well after each addition. Stir in 1 teaspoon of vanilla extract.
- Gradually add the flour mixture to the wet ingredients, alternating with 1/2 cup of milk, beginning and ending with the flour mixture. Mix until just combined.
- Gently fold in 1/4 cup of colorful sprinkles.
- Scoop the batter into the prepared muffin tin, filling each liner halfway. Place a small chocolate candy in the center of each cupcake, then cover with more batter until the liners are about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely.
- In a small bowl, whisk together 1 cup of powdered sugar, 2-3 tablespoons of milk, and 1/2 teaspoon of vanilla extract to make the glaze. Drizzle the glaze over the cooled cupcakes and top with edible silver star sprinkles.
- Enjoy the surprise of the starry filling inside each cupcake!
