Instructions

  • Rub the spice mixture onto the chicken breasts, ensuring they are evenly coated.
  • Heat a grill pan or skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest for a few minutes before slicing.
  • In the same pan, cook the bacon until crispy. Remove from the pan and drain on paper towels.
  • Spread 1 tablespoon of mayonnaise on each slice of bread. Place 2 slices of pepper jack cheese on 2 of the bread slices.
  • Divide the sliced chicken, avocado, and bacon between the two slices of bread with cheese. Top with the remaining bread slices.
  • Spread 1/2 tablespoon of butter on the top of each sandwich.
  • Heat a panini press or a skillet over medium heat. Place the sandwiches in the pan and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
