Ingredients

  • 1 box of white cake mix
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1 cup water
  • 1 cup vanilla frosting
  • 24 cake pop sticks
  • 1 lb white candy melts
  • Assorted food coloring
  • Edible glitter or sprinkles

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan.
  • In a large bowl, combine the white cake mix, 3 eggs, vegetable oil, and water. Mix until well combined.
  • Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely, then crumble it into a large bowl.
  • Add the vanilla frosting to the crumbled cake and mix until well combined. The mixture should be moist enough to roll into balls.
  • Using your hands, roll the cake mixture into 24 evenly sized balls and place them on a baking sheet lined with parchment paper.
  • Insert a cake pop stick into each ball, then place the baking sheet in the freezer for 15 minutes to firm up the cake pops.
  • While the cake pops are chilling, melt the white candy melts in a microwave-safe bowl according to the package instructions.
  • Divide the melted candy melts into separate bowls and tint each one with a different food coloring to create a rainbow effect.
  • Remove the cake pops from the freezer and dip each one into the colored candy melts, allowing any excess to drip off. Place them back on the parchment paper to set.
  • Before the candy coating sets completely, sprinkle the cake pops with edible glitter or sprinkles to add a sparkling effect.
  • Allow the cake pops to set completely before serving. Enjoy!

The history of Sparkling Rainbow Cake Pops can be traced back to the creative minds of pastry chefs looking to add a whimsical twist to traditional cake recipes. These delightful treats gained popularity in the early 2000s as a fun and colorful addition to dessert tables at parties and events. The cake pops are made by crumbling cake, mixing it with frosting, shaping it into balls, and then dipping them in colorful candy melts before adding a touch of edible glitter for a sparkling finish. Today, these delightful confections can be found in bakeries and dessert shops across the world, with some of the best versions hailing from artisanal bakeries in cities known for their vibrant culinary scenes, such as New York, Paris, and Tokyo. The key to perfecting these cake pops lies in achieving the ideal balance of moist cake and creamy frosting, as well as mastering the art of creating a smooth, glossy coating that sparkles with every bite. For those looking to put a unique spin on this classic treat, experimenting with alternative methods such as using different cake flavors or incorporating unexpected fillings can result in a delightful twist on the traditional recipe.
