Ingredients
- 1 pound of sea scallops
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of olive oil
- 2 tablespoons of unsalted butter
- 2 cloves of garlic, minced
- 1/4 cup of chicken broth
- 2 tablespoons of fresh lemon juice
- 1 tablespoon of chopped fresh parsley
Instructions
- Pat the scallops dry with paper towels and season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the scallops to the skillet and cook for 2-3 minutes on each side until golden brown and opaque. Remove the scallops from the skillet and set aside.
- In the same skillet, melt 2 tablespoons of unsalted butter over medium heat. Add 2 cloves of minced garlic and cook for 1 minute until fragrant.
- Pour in 1/4 cup of chicken broth and 2 tablespoons of fresh lemon juice. Bring to a simmer and cook for 2-3 minutes until the sauce slightly thickens.
- Return the scallops to the skillet and toss to coat with the lemon butter sauce. Cook for an additional 1-2 minutes to heat the scallops through.
- Sprinkle with 1 tablespoon of chopped fresh parsley and serve immediately.
