Instructions

  • Pat the scallops dry with paper towels and season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add the scallops to the skillet and cook for 2-3 minutes on each side until golden brown and opaque. Remove the scallops from the skillet and set aside.
  • In the same skillet, melt 2 tablespoons of unsalted butter over medium heat. Add 2 cloves of minced garlic and cook for 1 minute until fragrant.
  • Pour in 1/4 cup of chicken broth and 2 tablespoons of fresh lemon juice. Bring to a simmer and cook for 2-3 minutes until the sauce slightly thickens.
  • Return the scallops to the skillet and toss to coat with the lemon butter sauce. Cook for an additional 1-2 minutes to heat the scallops through.
