Ingredients
- 6 large egg yolks
- 1/2 cup granulated sugar
- 1/4 cup sweet Marsala wine
- 1/2 teaspoon vanilla extract
- 2 cups mixed fresh berries (such as strawberries, blueberries, raspberries)
Instructions
- In a heatproof bowl, whisk together 6 large egg yolks and 1/2 cup granulated sugar until well combined.
- Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Whisk constantly while slowly adding 1/4 cup sweet Marsala wine. Continue whisking until the mixture thickens and becomes pale yellow, about 5-7 minutes.
- Remove the bowl from the heat and continue whisking for another minute to cool slightly. Stir in 1/2 teaspoon vanilla extract.
- Divide the sabayon among 4 serving glasses or bowls. Chill in the refrigerator for at least 1 hour to set.
- Just before serving, top each serving with a generous amount of mixed fresh berries. Enjoy!
