  • 4 tablespoons of Dijon mustard
  • 1 large onion, thinly sliced
  • 4 dill pickles
  • 8 slices of bacon
  • 2 tablespoons of vegetable oil
  • 2 cups of beef broth
  • 1 cup of sliced mushrooms
  • 1/4 cup of all-purpose flour
  • 1/2 cup of red wine
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 350 degrees F.
  • Lay out the beef slices and spread 1 tablespoon of Dijon mustard on each slice.
  • Place a few slices of onion and a pickle on each beef slice. Roll up the beef and secure with toothpicks.

  • Slowly pour in the beef broth and red wine, stirring constantly to avoid lumps. Season with salt and pepper.
  • Pour the mushroom gravy over the beef rolls in the baking dish.
  • Cover the dish with foil and bake for 1.5 hours, or until the beef is tender.
  • Remove the toothpicks from the beef rolls before serving.
  • Serve the Rouladen with the mushroom gravy spooned over the top.

Rouladen, a traditional German dish, has a rich history dating back to the 19th century. This delectable dish consists of thinly sliced beef, filled with mustard, onions, and pickles, then rolled and braised to perfection. The addition of a savory mushroom gravy adds depth and flavor to the dish, making it a favorite among food enthusiasts. Chefs in regions like Bavaria and Swabia have perfected the art of preparing Rouladen, often using locally sourced ingredients for an authentic taste. Today, the best versions of this dish can be found in cozy German restaurants, where skilled chefs pay homage to the classic recipe. The key to a delicious Rouladen lies in the quality of the beef and the balance of flavors in the filling and gravy. For a twist, some chefs also incorporate bacon or different types of mushrooms into the dish, adding their own unique touch to this beloved recipe.
