  • 1/2 cup of arugula
  • 2 tablespoons of butter

Instructions

  • Spread 1 tablespoon of mayonnaise on one side of each slice of bread.
  • Place 2 slices of roast beef on 2 slices of bread, then top each with 2 slices of cheddar cheese.
  • Spread 1/2 tablespoon of Dijon mustard on the remaining 2 slices of bread and place them on top of the cheese, mayonnaise side down.
  • Heat 1 tablespoon of butter in a skillet over medium heat.
  • Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  • Remove the sandwiches from the skillet and open them up.
  • Add 1/4 cup of arugula to each sandwich, then close them up and slice in half.
  • Serve hot and enjoy!
