Roast Beef and Cheddar Sandwich

Ingredients
- 8 slices of roast beef
- 4 slices of cheddar cheese
- 4 slices of whole wheat bread
- 2 tablespoons of mayonnaise
- 1 tablespoon of Dijon mustard
- 1/2 cup of arugula
- 2 tablespoons of butter
Instructions
- Spread 1 tablespoon of mayonnaise on one side of each slice of bread.
- Place 2 slices of roast beef on 2 slices of bread, then top each with 2 slices of cheddar cheese.
- Spread 1/2 tablespoon of Dijon mustard on the remaining 2 slices of bread and place them on top of the cheese, mayonnaise side down.
- Heat 1 tablespoon of butter in a skillet over medium heat.
- Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Remove the sandwiches from the skillet and open them up.
- Add 1/4 cup of arugula to each sandwich, then close them up and slice in half.
- Serve hot and enjoy!
