Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup white sugar
- 2 cups all-purpose flour
- 4 large eggs
- 1 1/2 cups white sugar
- 1/4 cup all-purpose flour
- 2/3 cup fresh lemon juice
- 1/3 cup raspberry jam
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x13 inch baking pan.
- In a medium bowl, cream together 1 cup of softened butter, 1/2 cup of white sugar, and 2 cups of flour. Press into the bottom of the prepared pan.
- Bake for 15 to 20 minutes in the preheated oven, or until firm and golden.
- In another bowl, whisk together 4 eggs, 1 1/2 cups of white sugar, 1/4 cup of flour, and lemon juice. Pour over the baked crust.
- Drop small spoonfuls of raspberry jam over the top of the lemon mixture and swirl with a knife to create a marbled effect.
- Bake for an additional 20 to 25 minutes in the preheated oven. The bars should be set and the edges slightly browned.
- Allow to cool in the pan on a wire rack. Once completely cooled, dust with powdered sugar and cut into squares. Enjoy!
