Instructions

  • In a blender or food processor, pulse 1 cup of shelled pistachios until finely chopped.
  • In a saucepan, combine 2 cups of whole milk and 1 cup of heavy cream. Heat over medium heat until it begins to simmer, then remove from heat.
  • In a mixing bowl, whisk together 3/4 cup of granulated sugar, 1 teaspoon of vanilla extract, 1/4 teaspoon of almond extract, and 1/4 teaspoon of salt.
  • Slowly pour the warm milk and cream mixture into the sugar mixture, whisking constantly to combine.
  • Add the chopped pistachios to the mixture and stir well. If desired, add a few drops of green food coloring to enhance the color.
  • Cover the bowl and refrigerate for at least 4 hours, or overnight, until completely chilled.
  • Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes.
  • Transfer the churned ice cream to a freezer-safe container and freeze for an additional 2-3 hours to firm up.
