Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened

- 3 cups powdered sugar

- 2-3 tablespoons milk
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together 2 1/4 cups of flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt. Set aside.
- In a large bowl, cream 1 cup of softened butter with 1 1/4 cups of granulated sugar until light and fluffy. Add 1 egg and 1 teaspoon of vanilla extract, and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Roll out the dough on a floured surface to about 1/4 inch thickness. Use cookie cutters to cut out shapes, and place them on the prepared baking sheet.
- Bake for 8-10 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- To make the frosting, in a medium bowl, beat 1/3 cup of softened butter until creamy. Gradually add 3 cups of powdered sugar, 2-3 tablespoons of milk, and 1 teaspoon of vanilla extract, mixing until smooth and creamy. Add food coloring if desired.
