Instructions

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, mix together 1 1/2 cups of graham cracker crumbs, 1/4 cup of granulated sugar, and 1/2 cup of melted unsalted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.
  • In a large bowl, beat 24 ounces of softened cream cheese, 1 cup of creamy peanut butter, 1 cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth. Add in 3 large eggs, one at a time, mixing well after each addition. Stir in 1 cup of sour cream. Pour the filling over the cooled crust.
  • Bake in the preheated oven for 45-50 minutes, or until the center is almost set. Remove from the oven and let it cool for 10 minutes. Run a knife around the edge of the pan to loosen the cheesecake from the sides. Allow it to cool completely, then refrigerate for at least 4 hours, or overnight.
  • In a small saucepan, heat 1/2 cup of heavy cream until it just begins to boil. Remove from heat and pour over 1 cup of semisweet chocolate chips. Let it sit for 5 minutes, then stir until smooth. Pour the chocolate ganache over the chilled cheesecake and spread it evenly. Sprinkle 1 cup of chopped peanut butter cups on top.
  • Refrigerate for another 30 minutes to set the ganache. Slice and serve. Enjoy!
